White Bean and Turkey Chipotle Chili May 8, 2011

Ingredients:
2 lbs ground turkey
1 large onion
2 garlic cloves, chopped
32 oz fat-free chicken broth
1 tsp ground cumin
1 tsp dried oregano
1 tsp chipotle chili powder
30 oz canned white beans, drained and rinsed
3 tbsp fresh lime juice
1/4 cups cilantro, chopped

Directions:
1. Cook turkey, onion and garlic over medium-high heat until turkey is browned.  Drain off any fat.
2. Add turkey mixture and remaining ingredients to a 3 1/2 quart or larger slow cooker.  Cover and cook on low heat setting for at least 4 hours.

***I threw a little bit of fresh cilantro on top of our chili once it was served up in bowls.  I didn’t think this was something that the kids would enjoy so they ate something more “kid-friendly”.  Jason and I both liked this meal though so I would definitely make it again!
