2 cups rolled oats
1/2 cup packed brown sugar
1/2 cup wheat germ
1 tsp ground cinnamon
1 cup all-purpose or wheat flour
3/4 tsp salt
1/2 cup honey
1 egg, beaten
1/2 cup vegetable oil
2 tsp vanilla extract
1 cup raisins (optional)
1. Preheat the oven to 350°F and generously grease a 9×13 inch baking dish.
2. In a large bowl, mix together the oats, brown sugar, wheat germ, cinnamon, flour, raisins and salt. Make a well in the center and pour in the vegetable oil, honey, egg and vanilla. Mix well using your hands.
3. Pour mixture evenly in the baking dish. NOTE: To make yours extra chewy, leave about one inch of space at one end of the pan when pouring the mixture.
4. Bake for 25-30 minutes in the preheated oven or until the bars begin to turn golden brown at the edges. Cool for 5 minutes, then cut into bars while still warm. Do not allow the bars to cool completely before cutting or they will be to hard to cut.
The best part of this recipe, is that you can make them however you want! Add in some peanut butter and chocolate chips. Or how about some craisins and slivered almonds? Mashed bananas, cranberries, blueberries…whatever your personal preference is, they’ll turn out great!
