Chicken Tortilla Soup March 18, 2009

3 skinless, boneless chicken breasts
1/2 tsp minced garlic
1/4 tsp ground cumin
2 (14.5oz) cans chicken broth
1 cup frozen corn kernels
1 cup chopped onion
1/2 tsp chili powder
1 tbs lemon juice
1 cup chunky salsa
tortilla chips (optional)
shredded Monterey Jack cheese (optional)
sour cream (optional)
fresh cilantro (optional)

1. Cube the chicken breasts and boil in water until fully cooked.  Rinse chicken in colander under cool water.  Chop chicken cubes into smaller pieces.
2. In a large pot over medium heat, combine chopped chicken, garlic and cumin and mix well.  Add the broth, corn, onion, chili powder, lemon juice and salsa.  Reduce heat to low and simmer for about 30 minutes. 
3. Place some tortilla chips into individual bowls and pour soup over chips.  Top with cheese, sour cream and cilantro.
