Twice Baked Potato Casserole March 19, 2009

Ingredients:
6 medium unpeeled potatoes, baked
1/4 tsp salt
1/4 tsp ground black pepper
1 lb sliced bacon, cooked and crumbled
3 cups (24 oz) sour cream
2 cups (8 oz) mozzarella cheese
2 cups (8 oz) shredded cheddar cheese
2 green onions, chopped

Directions:
1. Preheat oven to 350° F
2. Cut baked potatoes into 1 inch cubes and place half in a greased 9×13 inch baking dish.
3. Sprinkle with half of the salt, pepper and bacon.  Top with half of the sour cream and cheeses.
4. Repeat layers.
5. Bake uncovered for 20 minutes or until cheese is melted and bubbly.  Sprinkle with green onions.

This goes great with the Mushroom Stuffed Tenderloin!
