Old Fashioned Potato Salad June 5, 2009

5 potatoes
5 eggs
1 cup chopped celery
1/2 cup chopped onion
1/2 cup dill pickle relish
1/4 tsp garlic salt
1/4 tsp celery salt
1 tbsp prepared mustard
1/4 cup mayonnaise
pepper to taste

1. Bring a large pot of salted water to a boil.  Add potatoes and cook until tender but still firm, about 15 minutes.  Drain, cool, peel and chop.
2. Place eggs in a saucepan and cover with cold water.  Bring water to a boil; cover, remove from heat and let eggs stand in hot water for 10-12 minutes.  Remove from hot water, cool, peel.  Chop 3 of the eggs and slice 2 of the eggs.
3. In a large bowl combine the potatoes, chopped eggs, celery, onion, relish, garlic salt, celery salt, mustard, mayonnaise and pepper.  Mix together well and cover with sliced eggs.  Refrigerate until chilled, about 1 hour.

    This is the way potato salad is supposed to be made. No radishes. No olives. No dill. Just plain and simple potato salad. I think it is a Mid West favorite!
