We cheated a bit.
1. We had our Thanksgiving last Sunday. Why? Well, dad and MJ left Thanksgiving morning so I figured we should celebrate while they were still here. Mom and Peter are sailing the BVI’s so there was really no reason to wait until the official day of Thanksgiving since we’d be all alone.
2. I didn’t make a turkey. Instead I made Cornish Game Hens so that everyone had their own individual bird….and not a ton of leftovers.
I suggest making the butter the night before you make the Cornish Game Hens. Simply melt a stick of butter and stir in some freshly chopped garlic and basil leaves. Refrigerate overnight so that the butter has a chance to absorb the yummy garlic and basil.
Pat your game hens down to dry slightly. Season inside and out with salt and pepper. Fill inside with Sausage Stuffing and bake according to package directions. Approximately 1 hour at 350°F. Baste every 15-20 minutes with the prepared butter.
Serve with Creamy Corn casserole and flakey biscuits for a nice simple Thanksgiving meal!
